Domestic Rabbit MeatDomestic Rabbit Meat Rabbit meat is an all white meat,fine grained, mild in flavor and can be substituted for any veal or poultry recipe. Rabbit meat is higher in protein, but lower in fat,, uric acid, cholestoral, sodium and calories than any other meat. It is easily digested and a lot of doctors recommend rabbit meat when red meat is restricted in diets. The most common herbs in rabbit cookery are sage, oregano,sweet basil, thyme, rosemary, bay and cumin. But you can venture into using other spices and herbs, as I have done. The recipes here are our favorites, taste tested by friends and family. |
